
Pão de queijo
Pão de queijo is a traditional Brazilian delicacy with roots in the state of Minas Gerais. Its origins date back to the 18th century during the colonial period, when African slaves used cassava starch as a substitute for wheat flour, which was scarce in the region. By mixing the starch with milk, eggs, and cheese, they created a light and flavorful bread that quickly became popular. The recipe has been passed down through generations and evolved over the years, with the addition of different types of regional cheeses, such as half cure cheese. Today, pão de queijo is a constant presence on Brazilian tables, especially at breakfast and afternoon snacks, and is enjoyed for its crunchy exterior and soft interior.

PÃO DE QUEIJO (Cheese Bread)
Ingredients:
-500g tapioca starch (sweet tapioca flour).
-250ml milk.
-100ml water.
-100ml vegetable oil.
-1 teaspoon salt.
-2 eggs.
-200g half cure cheese (or Parmesan cheese), grated.
Instructions:
-Preheat the oven to 180°C (350°F).
-In a saucepan, combine the milk, water, oil, and salt. Bring to a boil.
-In a large bowl, place the tapioca starch. Pour the boiling mixture over the starch, stirring well with a spoon until the dough is smooth and warm.
-Add the eggs, one at a time, mixing well after each addition until the dough is smooth.
-Add the grated cheese and mix until well distributed throughout the dough.
-With your hands lightly greased with oil, form small balls approximately 2 to 3 cm in diameter and place them on a greased baking sheet or one lined with parchment paper, leaving space between them to expand.
-Place in the preheated oven and bake for about 20 to 25 minutes, or until the cheese breads are golden and firm to the touch.
-Remove from the oven and serve hot.
