COCADA

INGREDIENTES

- 2 cups (200g) of grated fresh coconut

- 1 ½ cups (300g) of sugar

- ½ cup (120ml) of water

- 1 pinch of salt

- Optional: 1 can (395g) of condensed milk for a creamier texture

INSTRUCTIONS

Prepare the base:

In a medium saucepan, combine the sugar, water, and a pinch of salt. Stir over medium heat until the sugar dissolves completely and forms a syrup.

Add the coconut:

Lower the heat and add the grated coconut to the syrup. Mix well until all the coconut is evenly coated.

Cook to consistency:

Continue stirring the mixture until it thickens and starts to separate slightly from the bottom of the pan. If using condensed milk, add it now and stir for another 5–7 minutes until creamy.

Shape the cocada:

Turn off the heat and quickly scoop the mixture onto a parchment-lined surface, forming small mounds or discs using two spoons.

Cool and serve:

Allow the cocadas to cool and harden at room temperature. Once firm, they are ready to serve!

Tips:

- Use fresh coconut for the best flavor, but unsweetened shredded coconut can be substituted.

- Store in an airtight container for up to a week.
