POLVILHO BISCUIT
INGREDIENTS
- 500g (4 cups) of sour cassava starch (polvilho azedo)
- 1 teaspoon of salt
- 200ml (¾ cup) of oil
- 200ml (¾ cup) of water
- 2 eggs
INSTRUCTIONS
- Place the cassava starch and salt in a large mixing bowl. Set aside.
- In a saucepan, heat the oil and water until they come to a boil.
- Pour the hot mixture over the starch and stir well with a spoon until it forms a crumbly dough.
- Gradually add the eggs, one at a time, mixing thoroughly until the dough becomes smooth and pliable.
- Transfer the dough to a piping bag or a sturdy plastic bag. Pipe the dough into rings or sticks on a greased or parchment-lined baking sheet.
- Preheat the oven to 180°C (350°F) and bake for about 20–30 minutes, or until the biscuits are lightly golden and crisp.
- Allow the biscuits to cool before serving. Store in an airtight container to maintain their crunchiness.
